Exotic Saffron Rice in the Lobster Shells

The simplest ingredients can become elegant with a creative presentation.


1 fillet of white fish, grilled
6 oz. (175 g) grilled calamari
1 cup of risotto rice
2 tbsp. butter
3 tbsp. olive oil
1 tbs. of marinated capers
1/4 cup minced onion
1 tbsp. minced garlic
½ tbs. of saffron spice
½ cup of dry white wine
½ cup of water
Fresh parsley
2 clean lobster shells
Salt and pepper to taste


Melt butter in a saucepan and cook onions for 3 min. Add rice and stir the mixture for 5 minutes on low heat. Add wine and cook further for another 5 minutes on medium heat. Add water and saffron, cover and cook for about 10 minutes. Add salt, pepper, garlic, fresh parsley and capers, white fish and calamari. Turn heat off and allow to steam another five minutes. Serve exotic rice in the lobster shells.
