Maldivian Cuisine at Home

Below are a few Maldivian recipes so that you can recreate traditional curry at home and include mango in your meal plan. Enjoy!

Traditional Maldivian Chicken Curry

500 g chicken breast
1 large white onion, cut in small pieces
2 fresh red chillies
4 tsp. vegetable oil
2 cups of coconut milk
5-7 curry leafs

Curry Paste
1 small onion, crushed
3 garlic gloves, crushed
2 tsp. fennel seeds
2 tbsp. coriander
2 tsp. cumin
2 tbsp. freshly grated ginger
1 pinch of turmeric
1 pinch of cinnamon
Salt & Pepper to Taste

Slightly roast the curry paste ingredients on the skillet over medium heat for at least 5 minutes. Add half a cup of hot boiled water and process the mixture in the food processor. Cut chicken breast into even cubes and marinate it in the curry paste for 2 hours. Before cooking the marinated chicken, stir fry onions, and fresh chillies in the vegetable oil over medium heat in the pan. Add the chicken and curry paste into the pan, cook it for 5 minutes then add coconut milk and curry leafs. Cook it until chicken is ready and tender. Serve it with steamed rice.

Juicy Mango Pudding

1/2 cup orange juice
1 tbsp. fresh lime juice
2 tsp. gelatine
1 mango, cut into chunks
1/2 cup sour cream
1/2 cup milk
1/3 cup sugar
2 tbsp. dark rum
1 tbsp. brandy

Mix citrus juices in a small saucepan. Sprinkle gelatine over the juice, and stir over low heat until gelatine dissolves. Let mixture stand until cool but not set. Combine mango, sour cream, milk, sugar, brandy and rum in a blender, and process until smooth. Mix gelatine and blend well. Pour into custard cups and chill until pudding is firm; usually takes about 5 hours.
